Honestly, anyone who says they don’t like brownies is lying
Sometimes you just need a slightly naughty batch of brownies… not for anyone or anything in particular, but honestly just for yourself – ya know? especially during a strange and challenging time like this… it’s totally okay to eat the entire batch (but PLEASE brush, floss, rinse your mouth with lots of water too) 😇
If you are ever in need of a brownie for your soul then try this! It’s gluten-free and vegan so hopefully most of you guys can enjoy it! If peanut butter isn’t your thing then just substitute it for another butter that you’re vibing.

PB CHOC FUDGE BROWNIE (vegan, gluten-free)

Ingredients
- 1 1/4 cup gluten-free self-raising flour
- 1/3 cup cocoa powder
- 2 flax eggs (2 tablespoons flaxseed meal + 6 tablespoons water)
- 1/2 cup smooth peanut butter
- 1 1/4 cup sugar
- 1 cup soy milk (or plant milk of choice)
- 1 tsp vanilla extract
- *Optional: extra chocolate chunks
- Topping: <ul
- 100g chocolate
- 1/4 cup peanut butter
Instructions
- 1. Preheat oven to 175 degrees Celcius, fan-forced. Line a square baking tin with non-stick paper
- 2. In a large bowl, prepare the flax eggs by mixing the flax meal with water. Wait for 10 minutes to thicken.
- 3. Once the flax eggs are thickened, whisk in the sugar, peanut butter, soy milk and vanilla extract until smooth. Then whisk in the flour &cocoa powder until just combined. Don't overmix. Optional you can stir in extra choc chunks too at
- 4. Transfer the batter to the lined tin. Bake in the oven for 30-35 mins until a knife inserted comes out almost clean.
- 5. Allow the brownie to cool fully before making the topping
- 6. Topping: melt the chocolate and spread it evenly it over the top of the brownie. Then melt the peanut butter for 20 seconds in the microwave. To make the ripple pattern, draw 4 lines with the peanut butter and then use a knife to drag in through the chocolate in a perpendicular direction to the lines.
