… yep no surprise – it’s pumpkin! After I made my healthy cookie dough brownie cups I’ve been obsessed with using pumpkin purée in my treats! You honestly can barely taste it but it gives such a moist, fudgy texture so it’s a great healthy substitute 🙌🏼

*Storage tips: in a freezer, all it to thaw at room temp for 5 mins before serving! **Please note if you leave them out for too long they go quite soft and gooey as there isn’t much fat in these
Ingredients
- ✅1 cup pumpkin purée
- ✅2 tablespoons almond butter (I used @99th_monkey )
- ✅1/4 cup vegan chocolate protein powder (I used @macr0mike )
- ✅1/4 cup cocoa powder
- ✅ 2 tablespoons maple syrup (I used sugar-free)
- ✅ 25g dairy-free chocolate, chopped (I used @bennetonaturalfoods )
Instructions
- 1. Line a small container with non-stick paper (my container was 12 x 12cm)
- 2. Add add the ingredients except for the chocolate chunks into a food processor or blender and blend until smooth.
- 3. Stir in the chocolate chunks. You can reserve some for decorating on top too
- 4. Transfer the mixture into the prepared container.
- 5. Freeze for at least 2 hours until it’s set before slicing.
