Who has had Japchae before?!
Either way, you guys NEED to try this easy, nutritious and delicious noodle dish! (I know you’ll love it) The word japchae itself translates directly as “mixed vegetables”. Although this dish is typically cooked with meat, it really doesn’t need it to be delicious!
Japchae uses a special type of noodle made from sweet potato starch (so yes it’s gluten-free!) They are gray in color and come dry in the packet and require you to boil them, after which they will soften and become almost translucent. These noodles are more chewy, springy in texture than most noodles but they absorb all the flavors wonderfully.

*Use an oil with a high smoke point like canola, rice brain oil, coconut oil, peanut oil
**Storage tips: in an airtight container in the fridge for up to 3 days or in the freeze for months
Ingredients
- 400g sweet potato noodles
- 4 cups vegetables, thinly sliced ( I used: onion, zucchini, carrot, capsicum)
- 8 shitake mushrooms
- 1 tablespoon oil*
- Seasoning Sauce:
- 4 tablespoons soy sauce
- 3 tablespoons brown sugar
- 2 teaspoons sesame oil
- 1 teaspoon mushroom stock powder (can sub for veg stock)
- 1 tsp white pepper
Instructions
- 1. Soak the sweet potato noodles in boiling water for 5 minutes (or as instructed on packet). Then drain the noodles and set aside.
- 2. If you are using dried Shitake mushroom, also soak that too. Reserve the water for later.
- 3. Finely slice all your vegetables
- 4. In a wok on high heat, stirfry all the vegetables for 5-7 minutes until tender. Transfer the veggies into to a bowl
- 5. Mix all the ingredients for the sauce and the pour it in into a hot wok. One it sizzles add in your noodles and toss until all the noodles are coated in sauce and change to a brown colour
- 6. Add in your vegetables, a dash of reserved mushroom water. Stirfry for 5 minutes
- 7. Sprinkle over some roasted white sesame seeds before serving!
