For those who aren’t Australian, a “Golden Gaytime” is a popular Australian icecream that consists of 4 luscious layers:

Cookie layer

Vanilla cream layer

Toffee caramel layer

Chocolate layer
Before I went vegan, I used to LOVE eating them, so what better way that to get creative & make it myself! These are definitely some of the best raw treats I’ve ever made! They do take a bit of time and patience, but the final result is seriously next level delicious and you just need to try it to believe it!
Here is the recipe:
VEGAN GOLDEN GAYTIME SLICE
(gluten-free, refined sugar free, no-bake)
Makes: 6 slices
INGREDIENTS:
Base + cookie crumb topping layers:

1 cup almonds
-
½ cup dates, pitted & soaked till soft

2 tablespoons water
-
1 scoop (40g) vanilla protein powder
Vanilla layer:

1/3 cup coconut cream
-
½ cup cashews, soaked for at least 4 hours (or ¼ cup cashew butter)

1 tablespoon coconut oil, melted
-
2 tablespoons maple syrup
-
1 Tsp vanilla extract
Salted Caramel Layer
-
1/4 cup coconut cream
-
1/2 cup cashews, soaked ( or ¼ cup cashew butter)

1 cup dates, pitted & soaked till soft
-
1/2 Tsp salt
Chocolate layer:
-
1/2 cup coconut oil, melted
-
1/2 cup cacao powder
-
1/2 cup maple syrup
METHOD:

Line a small container with non=stick paper ( mine was ~ 12 x 12 cm)

BASE & COOKIE: In a food processor, blend the almonds until fine crumbs. Then add in the remaining ingredients & blend until the mixture starts to stick together. Spread 3/4 of the mixture as the base & save 1/4 to crumble on top of the slice as the “cookie crumb”

VANILLA LAYER: blend together all the ingredients until thick & smooth. Pour over the base. Put into the freezer to set for 60 mins

CARAMEL LAYER: blend together all the ingredients until smooth & no lumps of dates remain. Spread evenly over the vanilla layer. Put into the freezer for 30 mins to set

CHOC LAYER: mix together all ingredients until a thick, pourable consistency. Pour over the caramel layer. Set in freezer for 10 mins

Once the slice is set, use a sharp knife to cut the slab into 6 portions.
*Storage tips: in an airtight container in the freezer and allow it to thaw at room temp for 2 mins before serving
