6-INGREDIENT SINGLE-SERVING MICROWAVE PROTEIN CINNAMON ROLL

Felt extremely creative and experimental so I created this cinnamon roll that you can cook in the microwave! Yep, a total of 60 SECONDS cooking time –  crazy!!! It tastes so yummy and is perfect if you’re craving cinnamon roll and don’t want to wait for the yeast to proof or bake an entire batch. 
 
Bonus is that one scroll contains a whopping 29g of plant protein, along with 11g of healthy fats and 34g of energy-packed carbs. Woohoo!
 
Here is the recipe:
 
6-INGREDIENT SINGLE SERVING MICROWAVE PROTEIN CINNAMON ROLL
(gluten-free, oil-free, high-protein)
 
INGREDIENTS:
  • 1 scoop (30g) vegan caramel protein powder 
  • 1/4 cup of GF self raising flour blend (*you can also just use regular self-raising flour if gluten isn’t an issue )
  • 1 tablespoon of peanut butter 
  • 1 tablespoon of applesauce 
  • 1 tablespoon of water (or as needed) 
  • 1/2 teaspoon of cinnamon 
  • 1 tablespoon of sweetener or sugar 
  • **Optional: a dash of melted coconut oil for greasing the bowl 
METHOD:
1. Mix all the ingredients except for the cinnamon and sweetener in a bowl
2. Use your hands to work the mixture u til it forms a homogenous dough. If it is too dry, you may need to add a bit more water
3. Roll the dough into a ball and then spread it out into a 4 x 25cm log
4. Mix the cinnamon and sweetener together and sprinkle it out the dough
5. Roll the dough into a scroll shape
6. Grease a microwave-safe bowl with a tiny bit of melted coconut oil. Pop the roll in the centre of the bowl
7. Microwave the roll for 60 seconds – DO NOT over cook or it will become super tough
8. Remove from the microwave and drizzle with melted PB if you want
