PEANUT BUTTER PROTEIN FUDGE BARS

Taking one of my favourite ingredients (peanut butter) and celebrating it in the best way possible! I’ve been told that these taste like fudge, hence why I call them fudge bars! These bars are super decadent, nutty and are both gluten-free and refined sugar free too! So if you are trying to impress someone, or just have some healthy yummy treats for yourself, definitely give these a go!

Here is the recipe:

PEANUT BUTTER PROTEIN FUDGE BARS

Makes: 12 bars
INGREDIENTS:
Base:
  • 2 cups of almond meal 
  • 1/4 cup of vegan protein powder 
  • 1/2 cup of gluten-free flour 
  • 2 tablespoons of rice malt syrup
  • 2 tablespoons of coconut oil
  • water as required 
Peanut butter fudge layer:
  • 1 cup of coconut cream
  • 1 cup of smooth peanut butter 
  • 1/4 cup of coconut sugar 
  • 1 teaspoon vanilla extract 
Toppings:
  • 1/2 cup of roasted peanuts, crushed 
Method:
1. Preheat the oven to 160 degrees Celsius and line a 20cm square pan with non-stick paper
2. Make the base: In a large bowl, combine the almond meal, gluten-free flour and protein powder
3. Add the rice malt syrup, coconut oil to the dry mixture, plus small amounts of water until the mixture clumps into a dough
4. Spread the base evenly in the prepared baking tin and bake for 15 minutes until just golden on top
5. Make the fudge layer: preheat a pot on medium heat. Add in the coconut cream, peanut butter, coconut sugar and vanilla extract and stir until mixture is smooth and combined.
6. Lower the heat down to a low simmer and cook for another 10-15 mins until the mixture has thickened 
7. Pour the fudge onto the pre-baked base and sprinkle over the crushed roasted peanuts. Refrigerate for 2 hours until set 
8.Remove from the fridge and cut into slices. 
** Storage tips: Store for 7 days in the fridge or store for months in the freezer and thaw in room temperature for 15 minutes before serving
