MATCHA PROTEIN GRANOLA BARS

So matcha you can do when it comes to making granola bars more fun? Well here is a delicious Matcha Protein Granola bar! The vanilla protein powder adds a depth of creaminess and sweetness which really compliments the green tea flavour! These bars would be perfect as a quick breakfast or snack on the go or even as a present for matcha-lovers.

Here is the recipe:

MATCHA PROTEIN GRANOLA BARS
(high-protein, refined sugar free, GF option)

INGREDIENTS:
Dry:
  • 3 tablespoons of matcha powder  
  • 2 cups of oats (can sub for GF oats)
  • 1 cup of rice bubbles
  • 1/4 cup vegan vanilla protein powder
  • ½ cup of Goji berries 
  • ½ cup of Shredded coconut  
  • ½ cup of almonds 
Wet:
  • 1 teaspoon of vanilla extract
  • 1/4 cup of cashew butter
  • 1/3 cup of coconut oil, melted 
  • 3/4 cup of maple syrup 
  • 50 g of dark chocolate 
Method:
  1. Preheat the oven to 160/ 320 . Line a 20 x 30 cm rectangular baking tin with non-stick baking paper
  2.  Combine all the dry ingredients in a large bowl
  3. Whisk together all the wet ingredients until it its thick and caramel-like
  4. Add the wet mixture into the dry ingredients and mix well until a sticky granola mixture forms
  5. Transfer the granola into the lined tin and bake in the oven for 20-25 minutes until the top is slightly golden
  6. Remove the slice from the oven and allow it to cool completely before cutting.
  7. Melt the dark chocolate. Drizzle the topping over the bars and allow it to sit an harden
*Storage tips: in an air-tight container for up to 3 days, fridge for up to 1 week or freezer for 1 month
