Coming to you with another easy tasty savoury meal idea! Cauliflower is one of my favourite vegetables as its so neutral in flavour but when blended, becomes thick and creamy, making it a super healthy and light “cream” replacement. The addition of miso paste adds a hit of umami to this dish and is what brings out the creaminess of the cauliflower too so definitely do not skip it!
This recipe conveniently makes one hefty serving packed with protein, veggies and tastes oh so lush & creamy.
Here is the recipe:
ONE-POT CREAMY MISO CAULIFLOWER PASTA
(oil-free, single serving, GF option, macro-friendly)
SERVES: 1 (cal: 438: P: 38g, F:6g; C:65g )
INGREDIENTS:
Pasta:

1 cup dried pasta (I used @sanremopasta high protein penne, can use GF pasta too)

1 cup of broccoli, chopped
-
2-3 mushrooms, sliced
-
handful of cherry tomatoes

100g tempeh, crumbled
Cauliflower miso sauce:
-
1 cup steamed cauliflower
-
1 teaspoon miso paste
-
2 tablespoons nutritional yeast
-
1/2 cup almond milk ( I used @califia_farms )

1/2 teaspoon garlic powder
-
*optional: 1 tablespoon cashew butter for extra creaminess
METHOD:

Cook the pasta according to packet instructions. Add in the broccoli, tomatoes and mushrooms halfway through so that they can also cook with the pasta.

Once the pasta is done, drain and return to the pot

Make the cauliflower miso sauce by combining all the sauce ingredients in a blender. Blend until smooth then pour the sauce into the pot with the pasta

Stir to combine

Serve immediately
