4-INGREDIENT PROTEIN HEDGEHOG SLICE

Hedgehog slice was one of my childhood faves, and for those who don’t know what it is: it typically consists of a simple yet scrumptious concoction of biscuits, butter, cocoa and sugar  – but today I’m here to share my simple veganized version of it which happens to taste better than the original thing in my opinion.
This is by no means a super “clean” treat but it super easy to make, tastes AMAZING and pack a punch of plant protein.
4-INGREDIENT PROTEIN HEDGEHOG SLICE 
(gluten-free, no-bake) 
MAKES: 4 large slices
INGREDIENTS:
Base:
  • 150g vegan shortbread biscuits ( I used the GF one from @woolworths_au )
  • 1 1.2 scoops (60g) vegan chocolate protein powder (I used @macr0mike Nutella)
  • 100g dark chocolate
  • 1/2 cup peanut butter ( or any nut butter of choice) 
Choc topping:
  • 50g dark chocolate 
  • 1/2 scoop (20g) vegan chocolate protein powder 
METHOD:
  1. Line a small container (mine was wox 15cm) with non-stick paper 
  2. Chop the biscuits into small chunks.
  3. Add the biscuit chunks and protein powder into a large bowl. Mix until the protein is dispersed throughout the biscuits 
  4. Melt the chocolate and peanut butter together until smooth. Pour this mixture into the protein biscuit mix & fold until the biscuit pieces are coated with chocolate sauce & the protein powder has all dissolved.
  5. Transfer this mixture into the lined container and press down until flat & even.
  6. Freeze for at least 1 hour
  7. Make the topping by melting the chocolate and then stirring in the protein powder until it has dissolved.
  8. Pour the choc topping immediately over the slice and return to freezer for 30 mins to set. 
** Storage: in an airtight container the freezer for months or in the fridge for up to 2 weeks (if it lasts) 

This is perfect for picnics and guaranteed to be loved by kids! I hope you guys try it 🙂
