Finally sharing this highly requested recipe to these healthified protein brownies. Thanks for being patient guys, it’s been a really hectic week for me!
These delicious brownie cups make the perfect little snack or dessert! I bought these to share at work and they were a huge hit!

BROWNIE PROTEIN CUPS (vegan, gluten-free, paleo)

*Storage tips: in an airtight container in the fridge for up to 2 weeks or in the freezer for months, allow it to thaw at room temp for a few mins before serving
Ingredients
- INGREDIENTS:
- ✅1 1/2 cup almonds
- ✅1/4 cup desiccated coconut
- ✅1/4 cup cacao powder
- ✅1/4 cup vegan protein powder
- ✅2 cups dates, pitted & soaked (reserve water)
- ✅2 tablespoons date water (adjust depends on how absorbent your protein powder is )
- ✅2 tablespoons coconut oil, melted
- ✅100g dairy-free chocolate
- ✅ Crumbled cookies or nuts to decorate (I used a @shelbys_hh choc chip cookie)
- Optional: drizzle of liquid sweetener e.g maple syrup
Instructions
- 1. Line 20 mini muffin holes
- 2. In a food processor, blitz the almonds until it resembles a fine flour
- 3. Add in the cocoa powder, coconut & protein powder and briefly process to combine
- 4. Add the the dates and date water, and coconut oil, then process until the mixture clumps/sticks together. If it doesn’t then you may need to add more liquid
- 5. Divide the mixture amongst your mini muffin holes. Freeze for 30 minutes
- 6. Melt the chocolate and pop a tablespoon over the top of each cup. Sprinkle you cookie or nut crumbs over the top. Return to the freezer for another 15 minutes to set
