I’ve been on a banana bread kick lately as I bought a bunch of cheap bananas from my local supermarket. So I thought, why not make a quick, single-serve microwave version that you guys can whip up when you are just craving banana bread but don’t want to bake an entire loaf .
This cake is super healthy, moist and delicious! Here is the recipe:
BANANA BREAD MICROWAVE PROTEIN OATCAKE (vegan, single-serve, oil-free, gluten-free*)

Ingredients
- 4 tablespoons oat flour
- 1 tablespoon vegan vanilla protein powder (I used @macr0mike )
- 1 tablespoon granulated sweetener ( I used @natvialiving )
- 1/4 tsp cinnamon
- 1/4 tsp baking powder
- 1/4 cup banana purée (1 small mashed banana)
- 4 teaspoons almond milk
- 2-3 Walnuts, chopped
- *Optional: extra banana pieces, cinnamon & walnuts to decorate
- **can sub sweetener for 1.5 tablespoons sugar of choice
Instructions
- 1. In a microwave-safe bowl/ramekin, mash the ripe banana very well.
- 2. Add in all the other ingredients and mix until no dry mix remains. Optional you can decorate with a few extra banana pieces, cinnamon & walnuts
- 3. Microwave for 90 seconds (cooking time can vary depending on the strength of your microwave)
- Serve warm! I smeared a dollop of almond butter on mine and it was divine
