Chocolate on chocolate is always a good idea. I made these super easy, 5-ingredient protein truffles to keep in my freezer as dessert and they definitely hit the spot Simple ingredients put together really can create magic!
Here is the recipe:
5-INGREDIENT FUDGE BROWNIE PROTEIN TRUFFLES
(gluten-free, no-bake)
Makes: 8 truffles
INGREDIENTS:

1 cup almonds

2 tablespoons cocoa powder

1/4 cup vegan chocolate protein powder

1 cup dates, pitted & soaked (reserve 1/4 of the water)

100g vegan chocolate
METHOD:

In a food processor, blitz the almonds until it resembles a fine flour

Add in the cocoa powder & protein powder and briefly process to combine

Add the the dates and date water and process until the mixture clumps/sticks together. If it doesn’t then you may need to add more liquid

Form the mixture into 8 evenly sized balls and freeze for 30 mins

Melt the chocolate and roll the balls in the chocolate to coat. Return to the freezer for another 15 minutes to set
*Storage tips: in an airtight container in the fridge for up to 2 weeks or in the freezer for months
