Cold days are perfect for hearty big bowls of oatmeal! This bowl of delicious and creamy, spiced carrot cake oatmeal captures the essence of carrot cake and is the epitome of cosy.
Here is the recipe:
CARROT CAKE OATMEAL
(GF option, refined sugar free, high-protein)
Serves: 1
INGREDIENTS:
- 1/2 cup of rolled oats
- 1 1/4 cups of almond milk
- 1/2 teaspoon of vanilla extract
- 1 teaspoon of cinnamon
- 1/4 teaspoon of nutmeg
- 2-3 tablespoons of pure maple syrup (to taste)
- 1/2 cup of grated carrots
- 1 scoop of vegan vanilla protein powder
METHOD:
- Combine the almond milk, oats, vanilla, cinnamon, nutmeg in a small saucepan on medium heat and bring to the boil.
- Once it has been bought to the boil, turn down the heat to a low simmer and add in the grated carrots, maple syrup and protein powder.
- Stir occasionally for about 10 minutes until the oatmeal is nice and creamy. You may add more liquid to thin it out to your desired consistency!
- Top the oatmeal with your toppings and eat it while its still warm!
My toppings were: crumble-stuff apple, Fresh fruit, Pumpkin seeds & walnuts, 100% raspberry jam, peanut butter
