NUTTY APPLE PIE BIRCHER MUESLI

If warm oats isn’t you thing, then definitely try soaking them overnight and making a bircher style muesli! Soaking the oats, seeds & grains also makes them much easier on the digestive system, allowing us to absorb more of the nutrients too.
 
I paired this cooling bircher with warm stewed apples to make it taste like apple pie, and it made it so fun and delicious to eat!
 
Here is the recipe:
NUTTY APPLE PIE BIRCHER MUESLI
(refined sugar free, oil-free, high-protein)
 
Serves: 1
INGREDIENTS:
  • 1/2 cup of rolled oats, 
  • 1 tablespoon of chia seeds
  • 1 tablespoon of vanilla protein powder
  • 1 cup of coconut milk 
  • 2 apples 
  • 1 teaspoon of ground cinnamon 
  • 1 tablespoon of coconut sugar
METHOD: 
The night before:
  1. Place the rolled oats, chia seeds, protein powder and coconut mylk into a container. Grate 1 apple into the container. Mix well, seal and leave in the fridge overnight or for a few hours. 
The next morning: 
  1. Chop 3/4 of the other apple into chunks, leaving the other ¼ for topping. Cook the apple chunks in a small saucepan on medium heat, along with the coconut sugar, cinnamon and 2 tablespoons of water for 6-8 minutes until apples are soft. 
  2. In the meantime, transfer the bircher muesli into your coconut bowl, slice the remaining apple into thin slices and chop up some pecans and walnuts.
  3. Once the apples have finished cooking, transfer them on top of the bircher, then top using the apple slices, chopped nuts, almond butter and coconut shreds.
