Another super cosy oatmeal bowl that captures winter! The combination of warm oats with spiced apples is just so delicious. Then, top it off with a creamy sweet nutty caramel – it’s really a whole new level! Definitely one of my favourite oatmeal combinations so I hope you give it a go!
Here is the recipe:
APPLE PIE PROTEIN OATMEAL with ALMOND BUTTER CARAMEL
(high-protein, refined sugar free, oil-free)
INGREDIENTS:
Apple & Oatmeal:

1 large apple

1 tablespoon of coconut sugar

2 tablespoons of water

1/4 teaspoon of cinnamon

2/3 cups of rolled oats

1 ¼ cups of almond milk
-
1 scoop of vegan vanilla protein powder ( I used @whitewolfnutrition)
Caramel:

3-4 dates
-
1 tablespoon of almond butter
METHOD:

Chop the apple into cubes and add into a small saucepan on medium heat with the coconut sugar, cinnamon and water.

Cook the apples for about 5 minutes until they are tender and stewed. Leave off the heat while you prepare the oatmeal.

In another small saucepan on medium heat, add the oats, almond mylk, and vegan vanilla protein powder. Cook the oatmeal for 6 -10 minutes until thick and creamy

In the meantime, blitz together the dates and almond butter in a small blender or food processor until its smooth and looks like caramel. You may need to add a bit of liquid to help it blend more easily.

Transfer the oatmeal into a bowl, top it with the stewed apples and almond caramel. I also added a few slices of fresh apple, strawberries and extra cinnamon onto mine.
EAT IT WHILE ITS WARM! Its so sooo good and satisfying.
