Creamy chocolate coating with a soft buttery cookie dough centre … these definitely did not last long! If you want an easy, healthy and delicious treat then definitely give this one a go.
Here is the recipe:
7-INGREDIENT COOKIE DOUGH PROTEIN TRUFFLES
(gluten free, refined sugar free, no-bake)
Makes: 7 truffles
INGREDIENTS:
Dry:
- 1 cup almond meal
- 1/4 cup vegan vanilla protein powder ( I used @macr0mike vanilla )
- 2 tablespoons cacao nibs
Wet:
- 2 tablespoons coconut oil
- 2 tablespoons hot water
- 3 tablespoons maple syrup
Coating:
- 90g vegan chocolate (I used @pana_organic eighty )
METHOD:
- In a large bowl, combine all the dry ingredients
- In a seperate bowl, stir together all the wet ingredients
- Add the wet ingredients to the dry mix and stir until a cookie dough forms. Add a dash more water if required.
- Shape the cookie dough into 7 equal portions and pop in the freezer for 30 minutes
- Melt the chocolate and roll the cookie dough balls in the chocolate to coat. Pop the balls in the freezer to set for another 30 mins
*Storage tips: in the fridge for 2 weeks or in the freezer for months, allowing it to thaw at room temp for 5 mins before serving
