CHINESE SPRING ONION PANCAKES

These pancakes are so fragrant savoury and moreish! They were definitely one of my favourite childhood street foods. For those of you who haven’t tried it before,  it might sound strange to have flat, savoury pancakes, but oh boy you really need to try it to understand how delicious they are! 
 
I’ve also included some photos of the steps to make it easier for you as it may seem a bit confusing when reading the steps!
 
Here is the recipe:
CHINESE SPRING ONION PANCAKES
 
Makes: 4 pancakes
 
INGREDIENTS:
  • 2 cups plain flour
  • 1 tsp salt 
  • 1 cup warm water + 1 tablespoon vegetable oil 
  • 1 cup spring onions, finely chopped 
  • (*only use the dark green part
  • Extra vegetable oil  for brushing &  pan frying 
METHOD: 
1. In a large bowl, mix the salt with the plain flour 
2. Make a well in the middle of the flour and pour in the warm water & oil mix. Stir quickly and then knead the dough for 5 minutes until it is soft & smooth. Form the dough into a ball and cover with a wet towel. Allow the dough to rest for 30 minutes
3. After resting, divide the dough into 4 equal portions.
4. One at a time, roll the dough out into a thin, large circle. Brush the surface with vegetable oil, sprinkle a big handful of spring onions over the top.
5. Roll the circle dough into a cylinder/cigar shape, and then turn it around and further roll into the shape of a snail/scroll
6. Use a rolling pin to roll out the dough into a large flat pancake 
7. Repeat steps 4-6 for the other portions of dough until you make 4 pancakes
8. Heat up a frying pan on medium-high heat using 1-2 tablespoons of oil 
9. Fry each pancake for 2-3 minutes on each side until golden. Transfer onto a plate.
10. Serve hot!!
