“Chow Mein” in a Chinese noodle dish and it literally translates to “stir-fried noodles” . This dish usually consists of fried noodles with shredded meat & vegetables but I have made my own healthified vegan version using a savoury Vegie Mince that I got from the chilled vegetarian section at my local supermarket (I used the brand Vegie Delights for anyone who wanted to know)

I’ve also added a twist by incorporating curry powder into the sauce which makes this ultra moreish!

MINCE CHOW MEIN (vegan, GF*, macro-friendly)

Ingredients
- âś… 150g plant-based mince ( I used @vegiedelights )
- âś…400g wok-ready wheat noodles (or noodles of choice)
- âś…1 medium onion, sliced
- âś…Vegetables: zucchini, capsicum, broccolini bunch, sliced
- âś…1 teaspoon vegetable oil
- Sauce:
- âś…1 Tablespoon curry powder
- âś…1/4 cup soy sauce
- âś…2 teaspoons garlic powder (2 cloves minced garlic)
- âś…1 Tablespoon coconut sugar
- âś… Splash of chinese cooking wine
Instructions
- 1. In a bowl, whisk together all the ingredients for the sauce. Set aside
- 2. If you are not using pre-cooked noodles, cook the noodles according to packet instructions, taking them out 2-3 minutes before they are fully cooked. Drain & set aside
- 3. Heat up the oil in a wok on high heat, then add the onions and stir-fry for 3 minutes until softened
- 4. Add in the Vegie mince and stir-fry for 2 minutes to break up the chunks
- 5. Add in the other vegetables & the sauce, stir and then pop a lid on for 5-7 minutes to steam the vegetables are tender
- 6. Add in the cooked noodles and toss everything together for 2 minutes until well mixed. Taste and feel free to add a dash more soy sauce if you want at this stage.
- 7. Slurp away!
