*Storage tips: in an airtight container in the fridge for up to 3 days or in the freezer for months
Ingredients
- ✅ 1 cup chana dal (split chickpeas)
- ✅ 1 cup coconut milk
- ✅ 2 tablespoons peanut butter
- ✅ 1 1/2 cups water
- ✅ 1 tablespoon coconut sugar
- ✅ Spices: 1 tablespoon curry powder, 1 teaspoon cumin, 1 teaspoon tumeric, 1/2 teaspoon ginger, 1 teaspoon salt
- ✅ 1 onion, diced
- ✅2 cups of vegetables: I used sweet potato, kale, green beans
- ✅ 1 tablespoon olive oil
- ✅Toasted peanuts for garnish
Instructions
- 1. Heat up the oil in a large pot on medium heat. Sautée the onion and spices for 2 minutes until golden
- 2. Add in the vegetables, split chickpeas, coconut milk, water, peanut butter, coconut sugar and salt. Bring to a boil and then reduce the heat down to a simmer for 20-22 minutes until the Dahl is thick and creamy. Stir every few minutes to make sure it does not stick to the pot. Feel free to add a dash more water if the mix appears too thick/dry.
- 3. Remove from heat and garnish with toasted peanuts
