Oh, did I mention, each cookie contains just 121 calories and 7g of plant protein too! I’m SO HAPPY at how incredibly delicious these healthy cookies turned out- so tasty that my boyfriend could not guess a single ingredient correct.

HEALTHY TRIPLE CHOC PROTEIN COOKIES (vegan, GF, macro-friendly, oil-free)

Ingredients
- ✅ 1 cup chickpea flour
- ✅ 1/4 choc protein powder
- ✅ 2 tablespoons granulated sweetener
- ✅ 1/3 cup cacao powder
- ✅ 1 teaspoon baking powder
- ✅ 1/3 cup almond butter
- ✅ 1/3 cup maple syrup (I used sugar free)
- ✅ 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)
- ✅ 50g white & dark chocolate, chopped
Instructions
- 1. Pre-heat the oven to 180 degrees Celsius, fan-forced. Line a baking tray with non-stick paper
- 2. Make the flax egg in a small bowl by stirring the flaxmeal with water. Set aside for 5 mins to thicken
- 3. In a large bowl, combine all the ingredients except for the chocolate. Add in the flax egg and fold everything together until a thick & sticky batter forms
- 4. Divide the batter into 8 even portions and use a spoon to form them into cookie shapes on the baking paper. (This can get a little messy) Allow 2 cm between each cookie.
- 5. Sprinkle the chocolate chunks over each cookie
- 6. Bake for 10-11 mins. Remove from the oven & allow the cookies to fully cool down, it will firm up as it cools.
