What’s your favourite way to enjoy granola?
Well, I used the awesome new Peanut Crunch Granola by @plantlifefoodco to make these delicious bars! This granola is nutty, full of healthy wholesome plant ingredients
These bars are sooo moreish, fudgy and the crunch from the granola makes it very fun to eat!

**Storage tips: in the freezer and allow it to thaw for a few mins before serving!
Ingredients
- Granola base:
- ✅ 3/4 cup granola ( I used @plantlifefoodco peanut crunch)
- ✅ 2 tablespoons maple syrup
- Nutty caramel filling:
- ✅ 3/4 cup peanut butter (or nut butter of choice)
- ✅ 3 tablespoons maple syrup
- *Optional: 1-2 tablespoons melted coconut oil to make it richer in texture
- Topping:
- ✅60g dairy-free chocolate
- ✅1 tablespoon peanut butter
- ✅ 1/4 cup granola
Instructions
- 1. Line a small container with non-stick paper (mine was 12 x 12 cm)
- 2. Make the BASE: in a bowl, add the granola & maple syrup together until sticky. Transfer this to the lined container and press down as an even layer. Freeze for 30 minutes.
- 3. Made the FILLING: Mix the peanut butter and maple syrup together until smooth. (Optional add melted coconut oil) Transfer this caramel as an even layer over the base. Freeze for at least 1 hour
- 4. Make the topping: melt the chocolate and stir in the nut butter until smooth. Pour this over the caramel layer and sprinkle the granola over the top before the chocolate sets. Return to the freezer for at least 30 mins to firm up before cutting and serving
