Seeing as tomorrow is ANZAC Day there is really no better fitting time to share these biscuits for some weekend baking!
A bit of history: ANZAC biscuits were made to sell for fundraising events to raise money for the war efforts during early 1900s. They were also called the “Soldier’s biscuits”
These biscuits are traditionally made using pantry staples like oats, flour, golden syrup & butter, but I’ve created this healthified vegan version for you guys to try!
The recipe makes 4 cookies because I have no one to share them with, but feel free to double or triple the recipe!

Ingredients
- 1/2 cup almond meal
- 1/4 cup oat flour
- 1/4 cup vanilla protein powder
- 1/4 cup desiccated coconut
- 1/4 cup pure maple syrup
- 1 tablespoon water
Instructions
- 1. Preheat the oven to 200 degrees Celsius, fanforced. Line a baking tray with non-stick paper
- 2. In a bowl, mix the almond meal, or flour, protein powder and coconut
- 3. Add in the maple syrup and water.
- 4. Mix until no dry flour remains and a thick cookie dough forms
- 5. Divide the dough into 4 equal portion. Shape into a cookie.
- 6. Bake in the oven for 12-14 minutes until golden
