This is probably the only savoury non-Easter themed recipe on your feed right now, but I thought I’d balance out all the sweet treats with this savoury oatcake!
I know what you’re thinking… SAVOURY OATS?! Don’t knock it till you try it!
This is a continuation with my microwave oatcake series – slightly unconventional, but nonetheless DELICIOUS! This would make a breakfast, yummy snack or side dish to a bigger meal!

SAVOURY PESTO MICROWAVE OATCAKE MUFFIN (vegan, single-serve, gluten-free*)

Ingredients
- 1/4 cup chickpea flour
- 1/4 cup oat flour* (can use GF oats)
- 1/2 tsp baking powder
- 1/2 tsp sea salt
- 1 tsp sweetener or sugar
- 1/4 cup almond milk (or plant milk of choice)
- 1 tablespoon vegan pesto + extra to drizzle (I used @rozas.gourmet )
- Couple of sundried tomatoes, chopped
Instructions
- 1. Mix all the ingredients together until a thick batter forms and no flour remains
- 2. Top with extra pesto and sprinkle of sundried tomatoes
- 3. Microwave for 90 seconds
- Serve warm!
