7-INGREDIENT COOKIE DOUGH PROTEIN TRUFFLES

Creamy chocolate coating with a soft buttery cookie dough centre … these definitely did not last long! If you want an easy, healthy and delicious treat then definitely give this one a go.
Here is the recipe:
7-INGREDIENT COOKIE DOUGH PROTEIN TRUFFLES
(gluten free, refined sugar free, no-bake)
Makes: 7 truffles 
INGREDIENTS:
Dry:
  • 1 cup almond meal
  • 1/4 cup vegan vanilla protein powder ( I used @macr0mike vanilla )
  • 2 tablespoons cacao nibs 
Wet:
  • 2 tablespoons coconut oil 
  • 2 tablespoons hot water
  • 3 tablespoons maple syrup 
Coating:
  • 90g vegan chocolate (I used @pana_organic eighty )
METHOD:
  1. In a large bowl, combine all the dry ingredients
  2. In a seperate bowl, stir together all the wet ingredients 
  3. Add the wet ingredients to the dry mix  and stir until a cookie dough forms. Add a dash more water if required.
  4. Shape the cookie dough into 7 equal portions and pop in the freezer for 30 minutes 
  5. Melt the chocolate and roll the cookie dough balls in the chocolate to coat. Pop the balls in the freezer to set for another 30 mins
*Storage tips: in the fridge for 2 weeks or in the freezer for months, allowing it to thaw at room temp for 5 mins before serving
