**Storage tips: in an airtight container in the fridge for up to 2 weeks or in the freezer for months, allowing it to thaw at room temp for 2 mins before serving
Ingredients
- PB Cookie:
- ✅ 1 cup peanut butter
- ✅ 1/4 cup coconut flour
- ✅ 1/4 cup vegan vanilla protein powder
- ✅ 2 tablespoons coconut oil, melted
- ✅ 1/2 cup pure maple syrup
- Choc coating:
- ✅ 100g dairy-free chocolate, melted
- ✅ 1 tablespoon coconut oil, melted
- *Optional: roasted peanuts for decoration
Instructions
- 1. Line a medium sized rectangular container with non-stick paper
- 2. In a bowl, combine all ingredients for the PB cookie until no dry mix left and a cookie dough forms.
- 3. Transfer the cookie dough as an even, flat layer too the prepared container. Freeze for at least 1 hour until solid
- 4. Take the cookie dough slab out of the container and cut into 9 even rectangular “fingers”
- 5. Melt the chocolate and roll each finger in the chocolate. *Optional: decorate with peanuts before the chocolate sets.
- 6. Return to the freezer for at least 15 minutes before serving
