Because my granola version of this was so popular, here is a yummy NO-BAKE version of it that you can try if you love the banana choc nut combo! This concoction tastes like cookie dough and would make an amazing breakfast or post-workout meal as it contains a good amount of healthy fat, long-lasting complex carbohydrates and 30g of plant protein per serve. You could totally bake this if you want, but I liked it raw!
6-INGREDIENT CHUNKY MONKEY PROTEIN RAWNOLA
(oil-free, no-bake, high-protein, refined sugar free)

Serves: 1
INGREDIENTS:
Dry:

3/4 cup oats (for GF option sub for rice or quinoa flakes)

1 scoop vegan protein powder (I used @macr0mike banoffee)

Handful of walnuts

25g dark chocolate, chopped
Wet:

1 large ripe banana
-
2 tablespoons natural peanut butter
*Optional: maple syrup or other liquid sweetener to taste
**Liquid e.g almond milk may be if required, depending on the size of your banana and brand of protein powder
METHOD:

Mix all the dry ingredients in a bowl

Blend the wet ingredients to create a nutty “banana milk”

Pour the “banana milk” into the dry mixture and mix until all the liquid is absorbed.

Gobble it down!
*Please note: This rawnola should be consumed soon as the unbaked ripe banana in the recipe can make it change colour and taste odd the next day! But hey, at least you can eat lots in one go 😉
