8-INGREDIENT VEGAN PROTEIN “TIM TAM”

Continuing on with my series of veganized popular confectionary bars, I’m excited to bring you these healthy veganized Tim Tams!! For those who don’t know what Tim Tam is, its bascially an Australian treat which consist of two chocolate biscuits with chocolate cream in the centre, then coated in more chocolate. Basically sugar heaven!
 
I made these using my new Magimix food processor and I can’t be happier! It’s such a powerful and good quality machine and I’ve honestly been wanting one for ages!
 
Here is the recipe:
 
8-INGREDIENT VEGAN PROTEIN TIM TAMS
 
Makes: 12 huge Tim tams
INGREDIENTS:
Choc biscuit:
  • 2 cups almonds
  • ¼ cup cocoa powder
  • 1 scoop vegan choc protein powder 
  • 1 cup dates, pitted & soaked
  • ¼ cup water
Choc Mousse filling:
  • 1 1/2 cups coconut cream
  • ½ cup almond butter
  • ½ cup rice malt syrup
  • 2 tablespoons cocoa powder
  • 1 scoop vegan chocolate protein powder
Choc Topping:
  • 300g vegan chocolate
 METHOD:
1. Line a square baking tin with2 layers of non-stick paper
2. CHOC BISCUIT: In a food processor, blend the almond until fine. Add in the rest of the biscuit ingredients and process until the mixture sticks together. You may need to add more water if necessary.
3. Split the choc biscuit mixture into half and form it into an even layer on one piece of non-stick paper. Repeat again such that you have two separate layers of choc biscuit of the same size on two separate pieces of non-stick paper. Set both cookie layers into the freezer to harden.
4. CHOC MOUSSE FILLING: add all mousse ingredients into a food processor and blend until smooth. Pour this layer onto the base choc biscuit layer, reserving the other choc biscuit layer to put on top once the mousse is set. Return to freezer for at least 3 hours to allow the mousse layer to freeze.
5. Once the mousse layer is frozen. Carefully place the second choc biscuit layer over the mousse.
6. CHOC TOPPING: Cut the Tim tam into even rectangular pieces. Melt the chocolate and coat all sides of the Tim tam. Return to freezer for at least 30 mins.
 
These are definitely a bit of effort but taste so so delicious! Let me know if you try it!
