These protein balls are inspired by my favorite Larabar flavour: peanut butter chocolate chip! I had it when I was in Hawaii and loved it so much! I wish we could buy it here in Australia without it costing an arm & a leg… so I decided to make my own! These legitimately taste so alike to the bar itself and it’s so hard to just stop a one.

Ingredients
- INGREDIENTS:
- 1 cup almonds
- 1 cup dates, pitted & soaked (reserve 1/4 cup of the date water)
- 1/4 cup vegan vanilla protein powder
- 2 tablespoons peanut butter
- 50g vegan dark chocolate, chopped
- *Optional: desiccated coconut to roll
Instructions
- METHOD:
- 1. In a food processor, blitz the almonds until it resembles a fine flour
- 2. Add in the protein powder and briefly process to combine
- 3. Add the the dates, date water & peanut butter, and process until the mixture clumps/sticks together. If it doesn’t then you may need to add more liquid.
- 4. in the chocolate chunks and process briefly until the chunks are smaller and mixed throughout the protein ball mixture.
- 5. Form the mixture into 12 evenly sized balls. If you want to roll them in coconut at this stage you can. Freeze for 30 mins 🙂
- *Storage tips: in an airtight container in the fridge for up to 2 weeks or in the freezer for months
