5-INGREDIENT CASHEW COOKIE DOUGH CRUNCH SLICE

This slice is decadent, moreish and packed with protein. Infact, it is soo good that I don’t even miss the peanut butter (but I’ll still forever be team PB). This treat is so easy to make, just whiz everything together and wallah! 
Here is the recipe:
 
5-INGREDIENT CASHEW COOKIE DOUGH PROTEIN CRUNCH SLICE 
(vegan, GF, oil-free, no-bake )
 
INGREDIENTS:
Cookie Dough Base:
  • 1/2 cup roasted cashews
  • 1/4 cup coconut flour
  • 1/4 cup vegan protein powder (I used @macr0mike salted vanilla) 
  • 1/4 cup dates, pitted & soaked
  • 1/4 cup water  
  • 25g vegan chocolate, chopped ( I used @whittakersnz )
  • *Optional: pinch of salt 
Topping: 
  • 75g dark chocolate
  • 1 tablespoon vegan protein powder
  • Handful of roasted cashews, crushed
METHOD:
  1. Line a container with non-stick paper (mine was 10 x 20cm )
  2. Add the cashews into a food processor and blitz until it resembles a flour. Then Add the coconut flour & protein powder to the cashews and blitz briefly until it’s all mixed.
  3. Add the dates and water and process until the mixture starts to stick together and form a ball. 
  4. Add in the chopped chocolate and blitz briefly until it is just mixed through the dough 
  5. Transfer the cookie dough into the lines container and flatten into an even layer. Place in the freezer for 20 minutes
  6. Melt the chocolate and stir in the protein powder until it dissolves. Pour the chocolate over the top of the cookie dough and quickly sprinkle the crushed cashews over the top before the chocolate sets. Return to the freezer to allow it to set for another 30 minutes before slicing & serving 
*Storage tips: in the freezer and allow to thaw at room temp for 2 mins before eating
