These jammy blondies contain just 97 cal and a whopping 12g of protein per slice!
I used chickpea to give a nutty, fudgy texture without having to add oil or fats… and for those who are curious, no you can’t taste the chickpeas!

Ingredients
- ✅ 80g vegan protein powder (I used @macr0mike PB cheesecake flavour)
- ✅1 tin chickpeas, drained
- ✅1/3 cup maple syrup (I used sugar-free)
- ✅1/2 cup water (or plant milk)
- ✅ 3 tablespoons berry jam (I used @natvialiving raspberry)
Instructions
- 1. Preheat the oven to 180 degrees Celsius, fan-forced. Line a small tin (mine was 8 x 16cm) with non-stick paper
- 2. Blend all the ingredients together, except the for jam, until thick and smooth.
- 3. Transfer the blondie batter to the prepared tin. Drop spoonfuls of jam over the top and use the back of your spoon to drag the jam through the batter to create a ripple effect
- 4. Bake for 20-22 minutes. Allow the blondie to fully cool before slicing
