*Storage tips: In an airtight container in the fridge for up to 5 days or in the freezer for months, allowing it to have at room temp for 10 mins before serving
Ingredients
- Base:
- ✅ 3 tablespoons vegan vanilla protein powder
- ✅ 2 tablespoons coconut flour
- ✅ 1/2 cup dairy-free vanilla yoghurt (I used @sodelicious cashew)
- Choc mousse filling:
- ✅1/2 cup dairy-free vanilla yoghurt
- ✅80g dairy-free chocolate, melted (I used @bennettonaturalfoods dark)
- ✅3 tablesooons vegan vanilla protein powder
- *Optional: extra maple syrup to sweeten
Instructions
- 1. Line a small container with non-stick paper
- 2. Make the base: mix all ingredients for the base together until a cookie dough consistency. Spread as an even layer in the prepared container. Freeze whilst you make the next layer
- 3. Make the chocolate mousse filling: melt the chocolate, then stir in the yoghurt and protein powder until smooth and homogenous. Spread this over the top of the base. (Optional you can add some decorations - I kept it simple and just used raspberries)
- 4. Freeze for at least 3 hours until the filling is firm before slicing
