Here is an easy & healthy meal idea for all the nacho lovers out there! This is a great healthy alternative to conventional nachos as its much lower is saturated fats and higher in healthy fats, vitamins, minerals. I had a pack of curry jackfruit from @amazoniaco handy, but if you don’t have it, then you can either try making your own pulled jackfruit or use beans!
Here is the recipe:
SWEET POTATO CURRY JACKFRUIT NACHOS
SERVES: 1
INGREDIENTS:
Sweet potato chips:

500g sweet potato
-
*Optional: spray oil for extra crispness
NACHO TOPPINGS:

@amazoniaco curry pulled jackfruit

1 small avocado, diced

1 tomato, diced
-
handful of coriander
-
1/2 cup black beans
-
@pimpmysalad cashew Parmesan

vegan mayonaise
METHOD:

Slice the sweet potato into very thin discs and cook in your air fryer ( I used my @ninjakitchenanz Ninja Foodi ) at 170 degrees Celsius for 20 mins until crispy. ***alternatively you can also bake the sweet potatoes in the oven

Arrange the chips on a plate and top with all the toppings!
