SALTED CHOCOLATE PROTEIN GRANOLA

A little bit of salt goes a long way – a saying that I totally agree with! This granola is extremely chocolatey, nutty and addictive. The sea salt here helps to enhance the chocolate notes, but also balances out the sweetness making you go back for more each time. 
 
This would be great served on a smoothie bowl, over some yoghurt with berries, as a snack on its own or even as gift!
 
Here is the recipe:
 
SALTED CHOC PROTEIN GRANOLA  
 
INGREDIENTS:
Dry: 
  • 1 cup rolled oats
  • 1 cup mixed nuts of choice 
  • 1 scoop vegan chocolate protein powder 
  • 2 heaped tablespoons of cacao powder
  • 1 tsp of sea salt 
  • *Optional: dark chocolate 
Wet:
  • 1/4 cup coconut oil, melted
  • 1/2 cup maple syrup 
  • 50g dark chocolate 
Method:
1) Preheat a fan-forced oven to 160℃ / 320℉. Line a large baking tray with non-stick paper
2) Roughly chop the raw nuts into chunks
3) In a large bowl, combine all the dry ingredients and mix well
4) make the wet mixture by melting the dark chocolate and then stir in the coconut oil & maple syrup until smooth 
5) Pour the wet mixture into the dry mixture. Mix until the granola clumps together.
6) Spread the granola in a single even layer onto the lined tray. 
7) Bake in the oven for 20-25 minutes 
8) Remove from oven and allow to cool. The granola will harden and become crunchier as it cools. Break the granola into chunks after it cools down. 
*Storage tips: in an airtight container for up to 1 week.
