RASPBERRY DOUBLE CHOC FUDGE BROWNIES

In the spirit of valentines day, I whipped up these ULTRA FUDGY protein brownie to share the love with the staff members at work!

Now, please note that these ARE NOT the “healthiest” vegan brownies in the world, but I did sneak in some protein powder to slightly balance out the sugar spike. Life is too short to always be eating super clean – regardless, they sure are freaking delicious & great for sharing (with non-vegans especially), so I hope you try it! 

Here is the recipe: 

RASPBERRY DOUBLE CHOC FUDGE BROWNIES 

Makes: 16 brownies 
INGREDIENTS:
Wet:
  • 2 x flax-eggs ( 2 Tb flax meal + 6 tablespoons water)
  • 1 tsp vanilla 
  • 1/4 cup coconut oil 
  • 1 cup almond milk (or liquid of choice) 
Dry:
  • 1 cup plain flour (I used white, but any will do, but you may need to alter the amount of liquid)
  • 1 tsp baking soda 
  • 1 tsp salt 
  • 1 scoop vegan choc protein powder
  • 3/4 cup cocoa powder 
  • 1 1/4 cup coconut sugar (can try substituting sweetener if you want to reduce sugar) 
Stir through:
  • 1/4 cup raspberries 
  • 1/4 cup dark choc, chopped 
METHOD: 
  1. Preheat your oven to 160 ℃/ 320 ℉. Line a square baking tin with non-stick paper 
  2. In a medium bowl, make the flax eggs by mixing together the flax meal & water. set aside for 5 mins to thicken 
  3. In a large bowl, add all the dry ingredients and mix until well combined
  4. Add in the flax eggs and the other wet ingredients. Fold gently with a spatula until just combined.
  5. Gently stir through the raspberries & dark choc 
  6. Transfer the brownie batter into the prepared tin 
  7. Bake for 20-25 minutes until the top is firm & a knife inserted comes out just a little bit dirty (we like to fudgyyyy) 
  8. Allow the brownie to cool before cutting! it will firm up a little as it cools
