Chocolate + caramel + pecans – what’s not to love?! Turtles are traditional a turtle-shaped candy made with pecans & caramel dipped in chocolate! I’ve taken inspiration from its flavours and combined it miso & tahini to create this delicious brownie-like protein cookie!

Here is the recipe:
VEGAN MISO TAHINI CHOCOLATE TURTLE COOKIES
MAKES: 10 cookies
INGREDIENTS:
Dry:

1 cup self raising flour

1/4 cup vegan choc protein powder (I used @macr0mike Nutella )

3/4 cup brown sugar

1/4 cup cacao powder ( I used @yoursuperfoods chocolate lover mix)
WET:

1/4 cup tahini
-
1/4 cup coconut oil, melted
-
1 tsp miso paste
-
1/4 cup almond milk
-
2 tablespoons aquafaba (chickpea brine)

25g vegan dark chocolate, chopped
TOPPINGS:
-
Caramel sauce ( I made my own – see recipe for my salted caramel cake)

Pecans

METHOD:
1. Preheat the oven to 160 ℃/ 320 ℉ and line two baking trays with non-stick paper
2. In a large bowl, combine all the dry ingredients
3. In a seperate bowl, combine all the wet ingredients until smooth
4. Add the wet ingredients into the dry. Use a wooden spoon or just your hands to mix until a thick dough forms. You can add a dash more liquid if required.
5. Divide the mixture into 10-12 portions. Roll into balls, spread them out on the baking sheets and flatten into a cookie shape
6. Bake the cookies for 10 minutes until the top becomes crackly.
7. Remove from the oven and allow to fully cool before decorating with caramel and pecans
*Storage tips: in an airtight container at room temp for 2 days, in the fridge for a week or in the freezer for months
