Whats your favourite sauce to have on your vegetables?
Well for me, satay would be one of my faves, so I whizzed up this delicious satay sauce for my Buddha bowl the other day using my Vitamix. This sauce is chunky from the last minute blending of roasted peanuts to resemble the satay sauce that you’d traditionally get.
I blended in steamed cauliflower instead of extra nut butter to add volume, creaminess and nutrients to the sauce. I honestly could not taste the cauliflower in it at all! Also, the addition of curry powder here really makes a subtle but noticeable difference so I would highly recommend it 👌🏼

*Storage tips: in an airtight container in the fridge for up to 3 days
Ingredients
- ✅ 1/2 cup steamed cauliflower
- ✅ 2 tablespoons peanut butter
- ✅ 1 clove garlic
- ✅ 1 teaspoon curry powder
- ✅ 1 tablespoon coconut sugar
- ✅ 1 1/2 tablespoons soy sauce
- ✅ 1/2 tablespoon vegan fish sauce
- ✅ 2 tablespoons water
- ✅ 1/2 tablespoon lemon juice
- ✅ handful of roasted peanuts
Instructions
- 1. Add all of the ingredients except for the roasted peanuts into your high speed blender ( I used the 225ml blending container on my @vitamix )
- 2. Blend until the sauce is thick & smooth
- 3. Add in the peanuts and blend until the peanuts a broken down, but still a little bit chunky.
- 4. Serving suggestions: drizzle the sauce over your protein, grain or vegetables for a delicious meal!
