I whipped up this super EASY & DELICIOUS lemon cake to share at work this week!
No oil needed, just a trusty can of coconut cream & some other very basic ingredients. It’s amazing what magic can be created! I hope you give this a go!

Ingredients
- ✅1 cup coconut cream (I used @naturescharm_au coconut whipping cream )
- ✅1 cup sugar
- ✅2 cups self-raising flour
- ✅1/4 cup lemon juice
- *Optional: 1 teaspoon vanilla extract

- Icing:
- ✅ 1 1/2 cups icing sugar
- ✅ 1 1/2 tablespoons lemons juice
Instructions
- 1. Preheat the oven to 175 degrees Celsius, fan-forced
- 2. Line a square baking tin with non-stick paper
- 3. In a bowl, stir together the sugar, lemon juice and coconut cream until the sugar dissolves
- 4. Add in the flour and gently fold until no lumps remain
- 5. Transfer the batter to the lined tin
- 6. Bake in the oven for 22-25 mins until a knife inserted comes out clean
- 7. Allow the cake to completely cool before icing. You can put it in the fridge/freezer to speed up the cooking
- 8. Make icing by whisking together the icing sugar & lemon juices until smooth and spreadable.
