CREAMY CINNAMON QUINOA PORRIDGE

Here is a cosy porridge that I made using the superfood quinoa! Did you guys know that quinoa contains all 9 essential amino acids – its one of the few plant foods that is a complete protein. How cool hey! I made this as a post- workout breakfast and it definitely left me feeling fab! 

Here is the recipe:

CREAMY CINNAMON QUINOA PORRIDGE
(gluten-free, refined sugar free, oil-free, high-protein)
Serves: 1
INGREDIENTS: 
  • 1/2 cup of quinoa, rinsed
  • 1 1/2 cups of almond milk 
  • 1 teaspoon of ground cinnamon 
  • 1/2 banana, mashed 
  • 1 tablespoon of natural peanut butter 
  • 1 tablespoon of pure maple syrup 
Method:
1) Place the quinoa and almond mylk in a small saucepan on medium heat. Bring it to a boil and then reduce the heat to a simmer, stirring occasionally 
2) Stir in 1/2 teaspoon of cinnamon, peanut butter and mashed banana. Cook for another 10 minutes until the quinoa is fluffy and the porridge is thick and creamy.
3)  Remove the porridge from the heat. Transfer it into your coconut bowl. 
4) Decorate the porridge with the remaining 1/2 teaspoon of cinnamon and fresh of your choice!
This breakfast is super high I protein even without added protein powders, high in fibre, warm, delicious and satisfying!
