CHUNKY MONKEY PROTEIN BROWNIES

Who else loves the Banana + chocolate combo?!? Well continuing on my choc banana frenzy, I’m very happy to present to you these super moist vegan Chunky Monkey Protein brownies! I happened to have some super ripe bananas handy and so this was a great way to use them up.

Conveniently, the mashed ripe bananas act as both an egg and oil replacer, as well as natural sweetener, thus making this brownie healthier! 

Here is the recipe:

CHUNKY MONKEY PROTEIN BROWNIES 
(gluten-free, oil-free, macro-friendly) 

MAKES: 9 large serves ( per slice – cal: 180, P: 6.5g, C: 29g, F: 4g ) 
INGREDIENTS: 
Dry: 
  • 1 1/2 cups gluten-free self-raising flour blend 
  • 1/3 cup cacao powder 
  • 1/4 cup vegan caramel protein powder 
  • 1/2 cup coconut sugar 
Wet:
  • 2 very ripe bananas, mashed (~ 1 cup mashed)
  • 3/4 cup cashew milk 
Toppings:
  • Chocolate chunks 
  • Banana chips
  • Walnuts 
METHOD:
  1. Preheat the oven to 175 ℃/ 350 ℉ and line a baking tin with non-stick paper
  2. Mix the dry ingredients together in a large bowl 
  3. Add in the wet ingredients and fold gently until combined. You may need a bit more liquid depending on how absorbent your protein powder is
  4. Transfer the batter to the prepared tin and sprinkle the chocolate, banana chips and walnuts generously over the top 
  5. Bake for 20-25 mins and allow the brownie to cool before cutting 
*Storage tips: in an airtight container in the fridge for up to 5 days or in the freezer for months.
