Here is one for all the choc mint lovers out there! If you’re like me and love this combo, then you’ll love these yummy choc mint protein bars. I used @wellnaturallyau sugar-free mint chocolate here to reduce the sugar content even more, but feel free to use any chocolate you like! These are perfect to keep in the fridge as a post-workout snack or for when you get peckish mid-afternoon and want something to hold you through to dinner!
Here is the recipe:
CHOC MINT PROTEIN BARS
(gluten-free, no-bake, low sugar, macro-friendly)
MAKES: 4 bars (per bar – cal: 198; P: 16g; F: 10g; C: 8g)
INGREDIENTS:
Dry:

80 vegan chocolate protein powder

1 tablespoon coconut flour

1 tablespoon almond meal

2 tablespoons cocoa powder
Wet:
-
1/3 cup almond milk
-
1/4 tsp peppermint extract
-
1 tablespoon almond butter
-
1 tablespoon maple syrup
Choc topping:

45g mint dark chocolate ( I used @wellnaturallyau )
METHOD:
1. line a container with non-stick paper (mine was ~ 10 x 15cm)
2. Combine all the dry ingredients in one bowl
3. Combine all the wet ingredients in one bowl and mix until smooth.
4. Pour the wet ingredients into the dry and use clean hands to mix until a thick dough forms
5. Spread the dough in the lined container and freeze for at least 30 minutes
6. Melt the chocolate and pour it as an even layer over the protein bar
7. Return to the freezer to set for 30 mins
8. Once set, cut into slices and serve.
**Storage tips: in an airtight container in the fridge for up to a week or in the freezer for months
