CHOC FUDGE PROTEIN MICROWAVE MUG CAKE

So I’ve been experimenting with mug cakes and I’ve finally found a relatively healthy, macro-friendly one that tastes super moist, fudgy, decadent… and best of all, literally cooks in 60 SECONDS!

You know, sometimes waiting for a cake to bake in the oven is just too much – especially if you want a post-workout treat or dessert ASAP. If you’ve ever feeling impatient for dessert or just want a quick & filling fix, then definitely give this a go!

Here is the recipe:

CHOC FUDGE PROTEIN MICROWAVE MUG CAKE 
(gluten-free, oil-free, refined sugar free, macro-friendly)

MAKES: 1 cake (cal: 297; P: 28g; F:14g; C: 24g ) 

INGREDIENTS:
  • 1/3 cup (30g) coconut flour 
  • 30g vegan chocolate protein 
  • 3 teaspoons (15 g) cocoa powder 
  • 1/2 teaspoon baking powder 
  • 2 tablespoons sweetener ( I used @nuviaproducts ) 
  • 1 flax eggs ( 1 tb flax + 3 tbs water) 
  • 1/2 cup almond milk 
  • *Optional: 1/2 tsp vanilla extract, choc chips 
METHOD:
  1. Mix all the ingredient together until a thick batter forms
  2. Microwave for 60 seconds, remove and allow to cool slightly before serving.
  3. Add extra toppings to Jazz it up! I added fresh strawberries,  @bennettonaturalfoods coconut chocolate & @macr0mike PB sauce
** Note: this cake will look a bit grainy due to the coconut flour, but I promise it tastes super fudgy.
