OBSESSION ALERT! If you haven’t tried the combo of caramelized banana on oats then you seriously NEED to because caramelizing the banana takes the flavour to another level and just makes the oatmeal so freaking tasty! I love this so much that I actually made it for dinner because I was craving it… and then topped it with more epic toppings. YUM!
I used coconut oil to caramelize my banana and i would highly recommend that you do too as it just adds another depth of flavour that is oh so good!
Here is the recipe:
CARAMELIZED BANANA CINNAMON PROTEIN OATMEAL
SERVES: 1
INGREDIENTS:

1 cup rolled oats

1 scoop vegan caramel protein powder ( I used @macr0mike )

2 cups almond milk

1 tsp cinnamon
-
1 ripe banana
-
1 tsp coconut oil
-
*Optional: 1 tsp coconut sugar to sprinkle on the banana for extra sweetness
METHOD:

On a small pot on medium heat, add in the oats and almond milk and bring to a boil, then reduce to a simmer. Cook for about 5 minutes until thick and creamy

Meanwhile, heat the fry pan to medium high heat and add in the coconut oil. Slice the banana into 1cm thick disks. Cook the banana for 1 minute on each side until golden.

Stir in the protein powder and cinnamon into the oatmeal, add a tad more liquid if required

Transfer the oatmeal into a bowl, add the caramelized bananas on top, along with any other toppings that you want!
I went a bit crazy with toppings and also included: @rawliciousdelicious Tim Tam bar, @hearusraw choc bliss ball, raspberries, walnuts & peanut butter
