Back with another healthy vegan sandwich idea for you guys! This time it’s a play on a curried egg mayo sandwich, but using canned butter beans instead.
Feel free to substitute for another white legume like chickpeas or navy beans!

BUTTER BEAN CURRIED “EGG” SALAD SANDWICH (vegan, gluten-free*)

Notes
*can just use salt if you don’t have it, but the black salt gives an “eggy” taste
**Optional: add in handful of diced vegetable e.g onion, carrot, celery, raisins
Ingredients
- 1 tin butter beans, drained
- 4 tablespoons vegan mayonnaise
- 2 teaspoons curry powder
- 1 teaspoon garlic powder
- 1 teaspoon maple syrup
- 1/4 tsp kala Namak (black salt)
- Bread, lettuce, tomato, cucumber
Instructions
- 1. Add all the ingredients into a bowl and mash it together.
- 2. Spread in on a slice of bread. Add some salad on top and slap on another price of bread
- Enjoy!
