Okay so for the longest time I always thought banoffee meant banana + coffee… but I recently discovered that it’s actually banana + toffee ?!??
So in honour of this revelation, I made this delicious banoffee cake to share with you guys! I honestly think this is one of the best cakes I’ve made and I am so excited for you to try it too!

**Storage tips: in an airtight container at room temp for 2 days, in the fridge for a week or in the freezer for months.
Ingredients
- Wet:
- ✅3 x medium ripe bananas, peeled (~150g peeled weight)
- ✅1/2 cup almond milk
- ✅1/3 cup coconut oil, melted ( I used @naturalrawc )
- Dry:
- ✅1 1/2 cups self-raising flour
- ✅1/4 cup vegan vanilla protein powder ( I used @macr0mike )
- ✅1/2 cup coconut sugar (I used @loving_earth )
- Toffee caramel:
- ✅1 1/2 cup coconut cream
- ✅3/4 cup coconut sugar
- ✅2 tablespoon corn starch
- ✅Pinch of salt
- *Optional: vanilla
Instructions
- 1. Preheat the oven to 160 degrees celsius. Line a rectangular tray with non-stick paper
- 2. Make the TOFFEE CARAMEL: Add the coconut cream and coconut sugar into a small pot on high heat. Bring to a boil and then reduce to a simmer for 15 minutes, stirring occassionally. Dissolve the corn flour in a bit of water and then add it to the caramel. Stir for 5 mins on low until it all dissolves and the caramel becomes thick and smooth. Pop it into the fridge
- 3. Make the CAKE BATTER: In a blender, add all the bananas and blend until smooth like "milk" Add the rest of the dry cake ingredients into a large bowl and pour the blended bananas. Fold gently until a thick cake batter forms. You may need to add a bit of water.
- 4. Transfer the cake batter to the lined tin.
- 5. Bake in the oven for 35 minutes until a knife inserted comes out almost clean.
- 6. Allow the cake to cool or pop it in the fridge to speed up the process
- 7.Once the cake is cooled, spread the toffee caramel on top and sprinkle with walnuts for decoration
