My friend Leah and I whipped is this massive plate of pancakes together and they definitely hit the spot. These a soft fluffy and slightly sweet, just like conventional pancakes should be! This is nothing fancy, just a staple good ol’ pancake recipe that shines on its own or with toppings of your choice!
Here is the recipe:
BEST FLUFFY VEGAN PANCAKES
INGREDIENTS:
Dry:

1 1/2 cups of flour

3 tsp baking powder

pinch of salt
Wet:

1 cup + 2 tbsp of plant milk
-
1/4 cup maple syrup
-
1 1/2 tsp vanilla essence
-
1 tablespoon melted coconut oil
METHOD:
1. In a large bowl, combine all the dry ingredients
2. In a separate bowl, whisk together the wet ingredients
3. Pour the wet mixture into the dry and whisk together until no dry flour remains
4. Heat a non-stick fry pan on medium heat or spray with oil (we used coconut oil)
5. Pour ~ 1/4 cup of batter for each pancake, cook for 2 mins on one side until golden before flipping to cook for another minute
6. Transfer to a plate and decorate with toppings
We went to town with our toppings including salted caramel chocolate, cashew caramel & choc cookie bites, a choc cookie sauce made using tahini + cookie butter and fruit for balance 😛
