These healthy high protein pancakes are so simple and come together easily at the touch of a blender! I used my new Vitamix Ascent 3500i blender, which I am honestly just obsessed with right now!

BANANA BLENDER PANCAKES (vegan, high-protein)

Ingredients
- ✅1 1/2 cup oats ( should make ~1 3/4 cup oat flour)
- ✅3 tablespoons vegan vanilla protein powder
- ✅2 tablespoons coconut sugar
- ✅2 teapsoons baking powder
- ✅1 teaspoon ground cinnamon
- ✅3/4 cup almond milk
- ✅1 large ripe banana
- *optional: vanilla essence
- ✅Coconut oil for cooking
Instructions
- 1. Add the oats to your blender ( I used my @vitamix ) and blend until it becomes a fine oat flour
- 2. Add in all the other ingredients and blend until the batter is thick & smooth
- 3. Heat a frying pan on medium heat with a bit of oil
- 4. Pour the pancake mixture into the pan, spread the batter into a circle shape. Cook for 2 minutes on each side until golden. Transfer the pancakes to a serving plate
- 5. Decorate the pancakes with your desired toppings! I used maple syrup, peanut butter and berries!
