I absolutely LOVE raw desserts! I went through a phase where I literally ate it every single day, if not twice a day – I was obsessed. However, raw treats are usually very expensive to buy so sometimes making it at home is a much more economical way to enjoy them.
This raw caramel slice is made using simple ingredients like nuts, dates & coconut yoghurt and contains protein powder in every layer!
Here is the recipe:
6-INGREDIENT RAW PROTEIN CARAMEL SLICE (vegan, gluten-free, no-bake)
MAKES: 6 slices
INGREDIENTS:
Base:
- 1 cup almonds
- ½ cup dates, pitted & soaked
- 1 tablespoon vegan vanilla protein powder (I used @macr0mike )
- 3 tablespoons water (adjust as required)
Caramel filling:
- ¾ cup coconut yoghurt
- ¼ cup peanut butter
- 2 tablespoons vegan vanilla protein powder
- ½ cup dates, pitted & soaked
- * Optional: 1 tsp of salt to make it a salted caramel
Chocolate Topping:
- 100g dark chocolate
- 1 tablespoon vanilla protein powder
METHOD:
1. Line a small container with non-stick paper (my container was 10 x 10cm)
2. Make the base: in a food processor, blend the almonds until they are fine. Add in the protein powder, soaked dates and water, then blend until the mixture clumps together. Spread this mixture evenly over the base of the container.
3. Make the caramel filling: in a blender or food processor, blend the coconut yoghurt, peanut butter, protein powder & dates until smooth. Pour the caramel filling over the base. Set in the freezer for at least 60 minutes until the caramel is firm
4. Make the chocolate topping: melt the chocolate and stir in the protein powder until smooth. Pour the chocolate over the set caramel layer
5. Put the slice back in the freezer for at least 30 minutes before cutting it
*Storage tips: in an airtight container in the freezer, allowing it to thaw at room temp for 2 minutes before serving
These slices barely lasted 2 days in my freezer because they just tasted so good! I hope you try it out 🙂
