Cookie inside a cookie?? Umm, yes please!
This one is not exactly the epitome of “healthy”, but it’s sure good for occasions like picnics, as a gift, or if you simply love Oreo & peanut butter and want to eat it (sometimes you don’t need an excuse to treat yourself! )
Here is the recipe:
5-INGREDIENT OREO STUFFED PEANUT BUTTER COOKIES
Makes: 6 cookies
INGREDIENTS:

6 Oreos

1 cup peanut butter
-
1/2 cup brown sugar (can sub for any)

1 flax-egg (1 Tb flaxmeal + 3 Tbs water)

1 scoop vegan protein powder ( I used @macr0mike original PB )

A dash of water if required
METHOD:

Preheat the oven to 160℃/ 350℉ and line a baking tray with non-stick parchment paper

In a large bowl, combine all the ingredients except for the oreos

Mix well ( clean hands work well) until a cookie dough forms

Divide the dough in 6 portions. Mould each portion of cookie dough around an Oreo and then place it on the baking tray.

Bake in the oven for about 15 minutes until the cookie is golden.

Remove from the oven and allow the cookie to cool completely. This is important because the cookie will be crumbly fresh out the oven continue to harden until it cools
**Storage tips: In an airtight container for up to 5 days
