MEXICAN PASTA SALAD with CORIANDER DRESSING

This is fun fusion dish for pasta and mexican food lovers! If you’re lazy, love pasta and want to prep a big batch of food in no time, then I definitely recommend this! To save time, I used a sachet of pre-blended Mexican seasoning that you can just buy from the supermarket. So for the pasta salad, you literally just have to add all the components to a bowl and mix it all together! 

Here is the recipe:
EASY MEXICAN PASTA SALAD with a CREAMY CORIANDER DRESSING
(oil-free, GF option)

Serves: 4-6 ⠀⠀⠀⠀⠀⠀
INGREDIENTS:⠀⠀⠀⠀
Pasta salad:
  • 400g dried pasta (you can use a GF version if you want)
  • 1 tin of black beans, drained
  • 1 tin of corn, drained 
  • 1 carton (250g) of cherry tomatoes 
  • 4 large handfuls of baby spinach
  • 1 sachet of Mexican/ burrito seasoning 
  • Other veggie ideas : peppers, pumpkin, sweet potato, more beans 
Creamy Coriander Dressing:
  • 1/2 cup coriander, packed 
  • 1 lemon, juiced 
  • 1/4 cup chickpeas, drained 
  • 1 tablespoon maple syrup 
  • 1 tablespoon tahini 
  • 1/4 cup water 
  • 1 tsp salt

METHOD:
  1. Cook the last according to instructions, drain and add half the sachet of Mexican seasoning to it. Toss gently to coat 
  2. In the meantime, prep the rest of the vegetables in a large bowl. Add in the other half of the Mexican seasoning.
  3. Fold the pasta through the vegetables
  4. Make the coriander dressing by blending all the ingredients in a blender until smooth 
  5. Drizzle the sauce over the pasta and serve 
*Note: if you don’t want the pasta to stick together, you can coat it in a bit of oil, otherwise you can keep it oil-free if it doesn’t bother you!
