SWEET POTATO CURRY JACKFRUIT NACHOS

Here is an easy & healthy meal idea for all the nacho lovers out there! This is a great healthy alternative to conventional nachos as its much lower is saturated fats and higher in healthy fats, vitamins, minerals. I had a pack of curry jackfruit from @amazoniaco handy, but if you don’t have it, then you can either try making your own pulled jackfruit or use beans! 
Here is the recipe:

SWEET POTATO CURRY JACKFRUIT NACHOS

SERVES: 1
INGREDIENTS:
Sweet potato chips:
  • 500g sweet potato 
  • *Optional: spray oil for extra crispness
NACHO TOPPINGS:
  • @amazoniaco curry pulled jackfruit 
  • 1 small avocado, diced 
  • 1 tomato, diced 
  • handful of coriander 
  • 1/2 cup black beans 
  • @pimpmysalad cashew Parmesan 
  • vegan mayonaise
METHOD: 
  1. Slice the sweet potato into very thin discs and cook in your air fryer ( I used my @ninjakitchenanz Ninja Foodi ) at 170 degrees Celsius for 20 mins until crispy. ***alternatively you can also bake the sweet potatoes in the oven 
  2. Arrange the chips on a plate and top with all the toppings! 
  3. Scoop up a bit of everything on a chip and dig in
